Tasty simple recipe for spicy meatballs, served with an equally simple tomato sauce.

400g lean minced steak
20g bread crumbs
40 grated parmesan cheese
2 teaspoons oregano
2 teaspoons chopped parsley
Salt & Pepper
2 large garlic cloves minced
1 red chilli chopped
Swig of milk
1 egg
Bread crumbs to coat

Mix egg, chilli, bread crumbs, parmesan, herbs, salt, pepper and garlic.

Fold in the mince – very, very gently, you don’t want compact the meat
Form into balls, again gently (as if they were your own!) (3 or 4 cm)
Roll in breadcrumbs
Cook on greased baking tray for 30 mins 180c
Turning once about 15mins

Tomato Sauce
Olive Oil
2 garlic cloves minced
1 chilli
1 400g can of tinned tomatoes
Good bunch of chopped basil
Salt & Pepper

Gently fry garlic & chilli for a couple minutes, add the tin of tomatoes (cut them up in ¼’s with wooden spoon) and basil. Simmer for 5 minutes – done..!

Serve meat balls and pour over the tomato sauce

Wine:  Torre Solaria Primitivo (has to be!)
