If you are lucky enough to be able to get fresh scallops, but the thought of opening & cleaning them stops you trying them, well I hope this short video will help you. I’m not saying this is the best way or the only way, it’s the way I have done them for years without any mishaps!

1 strong and sharp knife
1 chopping board resting on a damp cloth

hold the scallop firmly (you can use a cloth if you like) and insert the knife through the small gap
the idea is to cut the muscle away from the flat side of the shell
once in tease the whole scallop out of the shell
on the chopping board trim away the stomach etc. to leave it ready for the pan

top-tip Thanks to Jan for this ultra quick method of removing the guts from the scallop, leaving just the white muscle to remove with the knife.
