Yes it’s that time of year when the fridge is bulging with leftovers from the big day. My favourite leftover dish has to be rissoles made from cold roast beef, you can also make extras batches for the freezer.

225G Cold roast beef
1 small chopped onion
1 crushed garlic clove
40g fresh breadcrumbs
2 tablespoon chopped parsley
1/2 teaspoon cinnamon
1 small beaten egg
salt & pepper

First mince your beef using a food processor
Add all the ingredients together
Shape using your hands
Coat with seasoned flour
Shallow fry for 5 minutes either side, until nicely golden

Fantastic with chips & beans and a nice gold lager!
