You should now be harvesting lovely crunchy courgettes from the garden, these are wonderful cooked but also makes this refreshing summer salad that goes well with fish & chicken. I have been using this recipe for a while now and think it is a Jamie Oliver recipe, it certainly feels like one of his!

freshly picked courgettes
fresh chopped mint
1 red chilli
lemon juice
1 chopped garlic glove
sea salt
olive oil

Trim and slice the courgettes with a peeler to produce fine ribbons
Fry these on a griddle, just enough to colour the courgettes but they should still be crunchy
Lay the cooked courgettes on a large plate and sprinkle with the rest of the ingredients
Leave for a few minutes to allow the flavours to merge

Here I have served fried mackerel on the courgettes and herby couscous and finely chopped courgette ends!
