This recipe was made on Sunday 23rd September, the day it rained and it rained and it rained! We needed a meal to brighten up the day, so I opened the cookery books and found this gem in Jamie’s Dinners. I luckily had all the ingredients bar one, I had no smoked bacon/pancetta, Serrano Ham would have to do. Jamie recommends fresh corn on cob, but again it would have to be tinned, I had some leftover creamed celeriac which would also be added. Once cooked the dish really brought a ray of sunshine to such a grim day and it was good with the Serrano Ham, but a good smoked bacon would have added that extra wonderful flavour to the dish.

Serves 2

2 chicken breasts skinned removed
1 tin sweetcorn
1 tin cannellini or butter beans, drained
1 peeled banana
salt & pepper
white wine
150ml double cream
55g butter
6 rashers of smoked bacon or pancetta
fresh mint

squash up half the beans and add sweetcorn to a tray


careful cut a pocket in each breast and insert half banana in each
wrap with bacon and place on top of the beans & sweetcorn
add wine & cream and top with chunks of butter


cook for 30-40 mins until the bacon is crispy and the chicken is cooked – sprinkle with fresh mint

Serve with a crisp green salad, this one I added some orange to match the sweetness of the chicken.
