Without fail my wife buys her copy of the monthly home improvement magazine, “Your Home” and reads it from cover to cover to help her plan her next project! Also included in this month’s edition was a rather nice Dorset influenced recipe. We tried this Thursday night and it was absolutely delicious so I thought I would share it with you.
Serves 4
1 sliced onion
500g butternut squash cut into 1cm cubes
olive oil
2 finely chopped garlic cloves
300g orzo pasta
1 litre vegetable stock
100g spinach
100g Dorset Blue Vinny
handful chopped parsley

cook onion and butternut squash in oil until browned, stirring often

add the garlic and cook for 30 seconds
add the orzo and stock and bring to boil
simmer for 12 minutes or until the orzo is just cooked
stir in the spinach, cheese and parsley, season to taste

serve with a salad (we are hooked on pink mojo dressing, Olives Et Al) and a glass of Badger Poacher’s Ale! (I had to settle with water as it was a school night!)
